Ingredients

Main Ingredients

  • 1 cup dried apricots, chopped These provide natural sweetness.
  • 1/2 cup shelled pistachios, chopped Rich in flavor and adds a crunch.
  • 1/2 cup sweetened condensed milk Lush base for truffles.
  • 1 teaspoon vanilla extract Adds a warm aroma.
  • 1/4 teaspoon ground cardamom Optional for added spice.
  • 1/2 cup melted white chocolate Coat the truffles for richness.
  • 1/4 cup finely chopped pistachios For coating the truffles.

Instructions

Preparation

  • In a food processor, add the chopped dried apricots and shelled pistachios. Pulse until a fine, crumbly texture is achieved.
  • Add the sweetened condensed milk, vanilla extract, and optional cardamom. Pulse until well combined.
  • Roll the mixture into small balls, about one inch in diameter, and place on a parchment-lined tray.
  • Melt the white chocolate and coat each ball, allowing excess to drip off, then roll in chopped pistachios.
  • Refrigerate for at least one hour to set before serving.

Notes

These truffles can be served at afternoon teas, packed lunches, or as a delightful gift. Avoid common mistakes by pulsing the mixture enough and allowing sufficient time for the truffles to set. For variations, consider dark chocolate or almond paste instead of white chocolate.
