Ingredients

  • 2 tablespoons sugar Enhances flavor profile.
  • 1 teaspoon vanilla extract Adds warmth and depth.
  • 1 tablespoon lemon juice Brightens flavor.

For the topping

  • 1 cup fresh mixed berries Strawberries, blueberries, and raspberries.
  • 1 tablespoon honey To mix with berries for topping.

Instructions

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, combine graham cracker crumbs, melted butter, and 1 tablespoon of sugar until it resembles wet sand.
  • Press the mixture firmly into the bottom of a springform pan to create a solid crust.

Filling

  • In a blender or food processor, blend cottage cheese, honey, Greek yogurt, eggs, vanilla, lemon juice, and the remaining sugar until smooth.
  • Pour this mixture over the prepared crust.

Baking

  • Bake for 45-50 minutes until the center is set and lightly golden. It should have a slight jiggle.
  • Let cool to room temperature.

Topping

  • Mix fresh berries with 1 tablespoon of honey.
  • Spoon generously over the cooled cheesecake.

Chilling

  • Chill in the refrigerator for 2-3 hours before serving.

Notes

Make sure cream cheese is at room temperature for easier blending. Always preheat your oven for even baking. Allow the cheesecake to cool before chilling to help prevent cracks.
