Cooking Oil

Instructions

Preparation of Beef

  • Begin by heating a large cast-iron skillet over medium-high heat.
  • Add the olive oil, and once it’s shimmering, sear the chuck roast on each side for about 3 to 5 minutes.

Cooking in Crockpot

  • After searing, transfer the roast to a crockpot.
  • Sprinkle the beef bouillon over it and pour the enchilada sauce on top.
  • Set your crockpot to low and let the beef cook for about 10 hours.
  • Once cooking is complete, shred the beef and return it to the juices.

Grilled Cheese Assembly

  • Butter one side of each slice of Texas toast.
  • In a skillet, place the buttered side down and layer generously with the shredded beef, diced onion, queso fresco, and mozzarella cheese.
  • Top with another slice of bread, buttered side up.

Grilling

  • Cook each sandwich until the bread is golden brown and the cheese is melted, about 5 to 7 minutes per side.
