  • Crumble the Cookies: Start by crushing your Biscoff cookies into fine crumbs.
  • Make the Crust: In a bowl, combine the crushed cookies with melted butter until evenly coated. Layer this mixture into the bottom of each serving cup, pressing down firmly to create a solid crust.
  • Prepare the Cheesecake Filling: In a separate bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually mix in the powdered sugar, vanilla extract, and a pinch of salt until well blended and creamy.
  • Whip the Cream: In another mixing bowl, whip the heavy cream until stiff peaks form.
  • Add Biscoff and Brown Sugar: Gently fold in the Biscoff spread and brown sugar into the cream cheese mixture.
