Instructions

Preparation

  • Crumble the Biscoff cookies into fine crumbs using a zip-top bag and a rolling pin or pulse in a food processor.
  • In a small bowl, combine the crushed cookies with melted butter and mix until wet and crumbly.
  • Layer the crumbly mixture into the bottom of each cup, pressing down gently.
  • In a large bowl, beat the softened cream cheese until smooth and creamy.
  • Gradually mix in powdered sugar, vanilla extract, and a pinch of salt until combined.
  • In another bowl, whip heavy cream until stiff peaks form and carefully fold it into the cream cheese mixture.
  • Gently fold in Biscoff spread and brown sugar into the cheesecake mixture until smooth.
  • Spoon the cheesecake filling over the cookie crust in each cup. Repeat for another layer.

Chilling and Serving

  • Refrigerate the cups for at least 2–3 hours to allow the cheesecake to set.
