Instructions

Preparation

  • Preheat your oven to 325°F (165°C).
  • In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter. Blend until the mixture resembles wet sand. Press this into the bottom of a 9-inch springform pan to form a crust and bake for 10 minutes. Set aside to cool.
  • In a large bowl, beat together the softened cream cheese, sour cream, granulated sugar, vanilla extract, and lemon juice until smooth and creamy.
  • Add the eggs one at a time, mixing well after each addition.

Baking

  • Carefully pour the filling over your cooled crust and tap the pan gently to release any trapped air bubbles. Bake for about 50-60 minutes until the center is set but still slightly wobbly.
  • Let the cheesecake cool at room temperature, then refrigerate for at least 4 hours or overnight.
  • In a saucepan over medium heat, combine the dark cherries and cherry syrup and cook for 5-7 minutes until the cherries are tender.

Topping

  • Whip the heavy cream with powdered sugar until stiff peaks form.
  • Spread the whipped cream evenly over the chilled cheesecake, drizzle generously with the cherry mixture, and sprinkle with dark chocolate shavings.

Notes

For a lighter version, you can opt for low-fat cream cheese. If using fresh cherries, ensure they are pitted and halved. Avoid frequent oven door opening while baking.
