Instructions

Preparation

  • Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
  • In a mixing bowl, whisk together 2 1/4 cups all-purpose flour, 2 tsp baking powder, and 1/2 tsp salt.
  • In another bowl, beat 1 cup softened unsalted butter and 1 cup sugar until light and fluffy, about 4-5 minutes.
  • Add 4 large eggs, one at a time, beating well after each addition. Stir in 1 tsp vanilla extract.
  • Gradually add the dry ingredients to the wet mixture, alternating with 1/2 cup whole milk, until just combined.
  • Gently fold in 1 1/2 cups fresh blueberries.
  • Pour the batter into the prepared pan, smoothing the top.

Making the Crumb Topping & Baking

  • For the crumb topping, mix together 1/2 cup all-purpose flour, 1/4 cup sugar, 1/2 cup melted unsalted butter, and 1 tsp cinnamon until crumbly.
  • Sprinkle the crumb mixture evenly over the batter.
  • Bake for 35-40 minutes or until a toothpick inserted in the center comes out clean.
  • Let cool in the pan for a few minutes before transferring to a wire rack to cool completely.

Notes

Use room-temperature ingredients for a smoother batter. Fresh blueberries are ideal; if using frozen, do not thaw them before adding to the batter. Consider adding a tablespoon or two of lemon zest for an extra layer of flavor.
