  • Chop the broccoli and cauliflower into bite-sized florets.

Cooking

  • In a large pot, bring the milk to a gentle simmer with a pinch of salt. Add the broccoli and cauliflower, cooking until tender (about 15-20 minutes).
  • Meanwhile, heat olive oil in a skillet over medium heat. Sauté onion, carrot, bell pepper, and minced garlic until soft.
  • Once the vegetables are tender, blend them until smooth using an immersion blender. If needed, transfer in batches to a traditional blender.
  • Mix the sautéed vegetables into the creamy mixture, season with salt, and garnish with parsley and cherry tomatoes before serving.
