Instructions

Preparation

  • In a large mixing bowl, combine the steamed and finely chopped broccoli, shredded cheddar, grated Parmesan, breadcrumbs, eggs, minced garlic, and dried oregano. Season with salt and pepper to taste. Mix thoroughly until well incorporated.
  • Shape a small handful of the mixture into a patty, placing a square of melting cheese in the center and folding the edges over to enclose the cheese. Form it into a round patty.
  • Heat olive oil in a skillet over medium heat until hot but not smoking.

Cooking

  • Fry the patties gently for approximately 3-4 minutes on each side, until golden brown and crispy.
  • Transfer the cooked patties to a plate lined with paper towels to absorb excess oil, and serve hot.

Notes

For a healthier option, substitute ground oats for breadcrumbs. You can bake the patties at 375°F (190°C) for 20 minutes, flipping halfway through. Avoid overcrowding the pan while frying.
