Ingredients

For the cookie base

For the peanut butter filling

For the chocolate coating

  • 1 cup semi-sweet chocolate chips Melted for the rich chocolate coating.

Instructions

Preparation

  • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a bowl, combine the melted butter and granulated sugar, mixing until smooth.
  • Add in the eggs and vanilla extract. Beat until fluffy.
  • In another bowl, whisk together the cocoa powder, flour, salt, and baking powder.
  • Gradually fold the dry mix into the wet mixture until the batter just comes together.
  • Drop tablespoon-sized portions of the brownie batter onto your prepared baking sheet, spacing them about 2 inches apart.
  • Bake for 10-12 minutes until the edges are set but the centers remain soft.
  • Allow the cookies to cool completely on the baking sheet.

Peanut Butter Filling

  • Prepare the peanut butter filling by mixing the creamy peanut butter and powdered sugar until smooth.

Assembly

  • Once the cookies have cooled, gently flatten each cookie slightly.
  • Add a dollop of the peanut butter filling on top and sandwich with another cookie.

Chocolate Coating

  • Melt the chocolate chips with the coconut oil in a microwave-safe bowl until smooth.
  • Dip the top of each cookie sandwich into the melted chocolate and let excess drip off.
  • Place the cookies back on the baking sheet to let the chocolate set fully.

Notes

Ensure ingredients are at room temperature for best results. You can add a sprinkle of sea salt on top of the chocolate for extra flavor. For an added crunch, incorporate chopped nuts into your brownie batter. Optional: use gluten-free flour for a gluten-free version.
