  • 1 small cabbage, shredded
  • 1.5 lbs lean ground beef (or ground turkey)
  • 1 large onion, chopped
  • 0.5 cup chopped red bell pepper
  • 1 15 ounce can diced tomatoes, undrained
  • 0.5 teaspoon salt
  • 0.5 teaspoon pepper
  • 0.5 teaspoon sugar
  • 1 teaspoon caraway seeds
  • 1 8 ounce can tomato sauce
  • 1 cup reduced-fat sour cream
  • 1 cup shredded Swiss cheese

Instructions

Preparation

  • Preheat your oven to 350°F (175°C).
  • Lightly grease a deep 13 x 9 baking dish with cooking spray or oil.
  • Place the shredded cabbage evenly in the bottom of the baking dish.

Cooking

  • In a large skillet over medium heat, brown and crumble the ground beef or turkey, adding the chopped onion and red bell pepper. Drain excess fat.
  • Add undrained diced tomatoes, salt, pepper, sugar, and caraway seeds to the drained beef mixture. Stir to combine.
  • Spread the seasoned beef mixture over the cabbage in the baking dish.
  • In a separate bowl, stir together tomato sauce and sour cream until well blended.
  • Spread the sauce over the beef mixture in the baking dish.
  • Cover with aluminum foil and bake for 1 hour.
  • Uncover and sprinkle shredded Swiss cheese on top, then bake for an additional 15-20 minutes until the cheese is melty and golden.

Notes

To enhance flavor, consider adding garlic powder or chopped garlic to the beef mixture. Red pepper flakes can add a kick. Substitute lean beef with ground chicken or plant-based meat alternatives for a lighter option.
