For the Enchiladas

  • 12 oz medium cheddar Freshly grated for creaminess

Instructions

Make the Chili Gravy

  • Heat a skillet over medium heat. Add ground beef, 1/2 tablespoon of kosher salt, and black pepper. Brown the beef, breaking it apart into small, tender pieces.
  • Add minced onion and cook for 2 minutes until it becomes translucent.
  • Stir in chili powder, garlic powder, onion powder, oregano, and cumin, letting the spices blend.
  • Sprinkle in flour to form a roux, gradually add beef stock, and bring the mixture to a gentle boil.
  • Allow it to simmer for 15-20 minutes, finishing with the remaining salt and a splash of fresh lemon juice.

Prepare the Tortillas

  • Heat oil in another skillet over medium flame.
  • Lightly fry each tortilla for 1-2 seconds per side until they are soft and pliable, then drain them on paper towels.

Assemble and Bake

  • Preheat your oven to 400°F. Grease a 9x13-inch baking dish with oil.
  • On each tortilla, place a generous amount of cheddar cheese and a sprinkle of minced onion.
  • Roll the tortillas tightly and arrange them seam-side down in the prepared baking dish.
  • Pour the rich chili gravy generously over the enchiladas, ensuring they are well-coated.
  • Bake in the preheated oven for 20 minutes, or until bubbly and golden.
  • Top with additional onion and cheese just before serving if desired.

Notes

Use freshly grated cheese for superior melt. Warm tortillas to prevent cracking when rolled. Taste the chili gravy before pouring it over to adjust seasoning.
