Preparation

  • Preheat the oven to 350°F (175°C) and grease a 9x13-inch casserole dish.
  • In a large skillet, heat olive oil over medium heat.
  • Add ground beef and cook until browned, about 5-7 minutes.
  • Add the chopped onion and sauté until softened, about 3-4 minutes.
  • Stir in garlic powder, onion powder, salt, and pepper.
  • Add the drained diced tomatoes and beef broth; let simmer for a few minutes.
  • Stir in the long-grain white rice and cook slightly until softened, about 5 minutes.

Assembly and Baking

  • Transfer the mixture to the casserole dish and spread evenly.
  • Top with the shredded cheddar and mozzarella cheese.
  • Cover with aluminum foil and bake for 25 minutes.
  • Remove foil and bake for an additional 10-15 minutes until cheese is melted and bubbly.
  • Let rest for 5 minutes before serving.

Notes

For best results, use freshly grated cheese. You can add sautéed bell peppers or mushrooms for additional flavor. A sprinkle of red pepper flakes can add heat, and for creaminess, consider adding a dollop of sour cream before layering.
