Ingredients

Instructions

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a bowl, toss the halved cherry tomatoes with 2 tablespoons of olive oil, minced garlic, salt, and pepper. Spread the seasoned tomatoes on a parchment-lined baking sheet and roast them for about 20 minutes until they are caramelized and tender.
  • Season the thinly sliced chicken breasts with salt, smoked paprika, and Italian seasoning.

Cooking

  • In a skillet, heat 2 tablespoons of olive oil over medium heat. Cook the chicken for about 5 minutes on each side until it’s golden brown and cooked through. Remove it from the skillet and slice it thinly.
  • In the same skillet, add the thinly sliced lemon and minced garlic, allowing them to sauté briefly. Add 4 tablespoons of butter and cook until the garlic is aromatic. Remove the skillet from heat.
  • Cook the spaghetti according to the package instructions; drain it and set aside.
  • In the skillet, combine the cooked spaghetti with the lemon slices and garlic butter, tossing well to ensure it’s evenly coated. Remove the lemon slices before serving.

Serving

  • Place the spaghetti on individual plates and top with slices of chicken, roasted tomatoes, and burrata cheese.
