Ingredients

Main Ingredients

  • 1 cup creamy peanut butter Choose a rich and creamy variety that will spread smoothly.
  • 1 cup marshmallow fluff This adds an indulgent layer to each bite.
  • 24 pieces crispy crackers Opt for multigrain or buttery crackers for added flavor and crunch.
  • 1 cup chocolate chips Use semi-sweet or dark chocolate for a rich coating.
  • 1 tablespoon coconut oil Optional; adds a silky sheen to the melted chocolate.

Instructions

Preparation

  • Spread a layer of creamy peanut butter on half of the crispy crackers, covering them generously.
  • Press another cracker on top of each peanut-buttered cracker to form small sandwiches.
  • Add a dollop of marshmallow fluff onto each peanut-buttered cracker, then cap each one with the remaining crackers.

Chocolate Coating

  • In a microwave-safe bowl, combine chocolate chips and coconut oil (if using). Heat in the microwave for 30 seconds, then stir. Continue heating in short bursts until smooth and fully melted.
  • Dip each sandwich into the melted chocolate, ensuring it is fully coated. Allow excess chocolate to drip off.
  • Place the coated stacks on a parchment-lined tray to prevent sticking.
  • Refrigerate for about 30 minutes, or until the chocolate hardens.

Serving

  • Once the chocolate is firm, serve your Chocolate Peanut Butter Stacks chilled or at room temperature.

Notes

Ensure peanut butter is at room temperature for easy spreading. Use high-quality chocolate chips for rich taste. Refrigerate stacks to harden chocolate properly.
