Instructions

Preparation

  • Preheat your oven to 350°F (175°C) and grease two 8-inch round cake pans.
  • Prepare the chocolate cake mix according to the box instructions.
  • Divide the batter evenly between the two cake pans and smooth with a spatula.
  • Bake for about 25-30 minutes, testing for doneness with a toothpick.
  • Let the cakes cool in the pans for about 10 minutes before transferring them to a wire rack to cool completely.

Ganache Preparation

  • In a small saucepan, bring the heavy cream to a simmer over medium heat.
  • Pour the hot cream over the semi-sweet chocolate chips in a bowl and let it rest for 5 minutes.
  • Stir until smooth and glossy, then mix in the butter and vanilla extract.

Assembly

  • Spread raspberry jam on the first cake layer. Add fresh raspberries on top.
  • Place the second layer on top and pour ganache over the assembled cake.
  • Garnish with additional raspberries and dust with powdered sugar.
  • Allow the ganache to set for about 10 minutes before slicing.

Notes

Ensure all ingredients are at room temperature for even mixing. Do not rush the cooling process to keep the cake from melting the ganache.
