Macaron Shell Ingredients

  • 1.5 cups powdered sugar
  • 1 cup almond flour
  • 3 large egg whites Aged egg whites work best for stable meringue.
  • 0.25 cups granulated sugar
  • 0.25 cups unsweetened cocoa powder For rich chocolate flavor.
  • a pinch salt To enhance flavors.
  • 1 tsp strawberry extract
  • optional pink food coloring For added color.

Ganache Filling Ingredients

  • 6 oz chopped white chocolate
  • 0.25 cups heavy cream Heated until simmering.
  • 2 tbsp strawberry puree

Instructions
 

Preparation

  • Preheat the oven to 300°F (150°C) and line two baking sheets with parchment paper.
  • In a food processor, pulse together the powdered sugar and almond flour until finely blended.
  • In a clean mixing bowl, beat the egg whites with a pinch of salt until soft peaks form.
  • Gradually add in the granulated sugar while continuing to beat until stiff peaks form.
  • Gently fold in the almond flour mixture, cocoa powder, and strawberry extract until combined.
  • Transfer the batter into a piping bag and pipe small circles onto the prepared baking sheets.
  • Let the piped macarons rest at room temperature for about 30 minutes until a skin forms.

Baking

  • Bake the macarons in the preheated oven for 15-18 minutes, checking for doneness.
  • Allow them to cool completely on the baking sheets.

Ganache Filling Preparation

  • In a small saucepan, heat the heavy cream until it simmers.
  • Pour the hot cream over the chopped white chocolate in a bowl and stir until smooth.
  • Mix in the strawberry puree and, if desired, a few drops of pink food coloring.

Assembly

  • Pipe a dollop of ganache on one macaron shell and top with another shell to create a sandwich.
  • Refrigerate the assembled macarons for at least 24 hours before serving.

Notes

Consider using aged egg whites for a more stable meringue. Measure ingredients carefully for the best results. Don't be discouraged by initial failures; practice makes perfect!
