Ingredients

  • 1 cup heat-treated flour For the filling
  • 1/4 tsp salt For the filling
  • 1/2 cup mini chocolate chips For the filling

For the assembly

  • 1 quart vanilla ice cream Softened, for assembly

Instructions

Preparation

  • Preheat your oven to 350°F (175°C) and line a 15×10-inch jelly roll pan with parchment paper.
  • In a large bowl, beat together the eggs and granulated sugar until thick and pale.
  • Mix in the vanilla extract.
  • In a separate bowl, whisk together the flour, cocoa powder, salt, and baking powder.
  • Fold the dry ingredients into the egg mixture gently.
  • Spread the batter in the prepared pan and bake for 12-15 minutes, or until a toothpick inserted comes out clean.
  • Cool on a towel dusted with powdered sugar, then gently roll it up in the towel and let it cool completely.

Filling and Assembly

  • Beat together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  • Mix in the vanilla, heat-treated flour, and salt to create a cookie dough base.
  • Fold in mini chocolate chips.
  • Unroll the cooled chocolate cake, spread with softened ice cream, then layer cookie dough filling on top.
  • Roll it back up tightly, wrap in plastic wrap, and freeze for at least 4 hours.
  • Slice and serve!
