Ingredients

For the crust

  • 2 cups crushed graham crackers Adds a sweet, buttery crunch.
  • 1/2 cup melted butter Creates a rich, cohesive base.

For the cheesecake filling

  • 24 oz softened cream cheese The creamy heart of the cheesecake, providing a luscious texture.
  • 1 cup sugar Sweetens the cheesecake to perfection.
  • 3 ripe bananas (mashed, plus extra for topping) Infuses the cheesecake with natural sweetness and a delightful banana flavor.
  • 3 eggs Binds the filling, helping it set beautifully.
  • 1 tsp vanilla extract Adds a warm, aromatic note.
  • 1/2 tsp cinnamon A hint of spice that elevates the overall flavor.

Instructions

Preparation

  • Preheat the oven to 325°F (160°C) and grease a 9-inch springform pan.
  • In a bowl, combine the crushed graham crackers and melted butter, mixing until the crumbs are fully coated. Press this mixture firmly into the bottom of the pan to form a crust. Bake for 10 minutes and let it cool.

Filling

  • In another bowl, beat together the softened cream cheese and sugar using a handheld mixer or stand mixer until smooth and creamy.
  • Add the mashed bananas, eggs, vanilla extract, and cinnamon to the cream cheese mixture. Blend until everything is well combined.
  • Pour the filling gently into the cooled crust, smoothing the top with a spatula. Bake for 50-60 minutes, or until the center is set but still slightly wobbly.

Cooling and Chilling

  • After baking, turn off the oven and let the cheesecake cool inside for about an hour.
  • Transfer the cheesecake to the refrigerator and chill for at least 4 hours, preferably overnight.

Serving Suggestions

  • Before serving, top with sliced bananas for an extra touch of sweetness.

Notes

Make sure your cream cheese is at room temperature for a smooth mixture. Allow the cheesecake to cool gradually in the oven to prevent cracks. Chilling overnight helps the flavors deepen and improves the texture. Avoid pitfalls like overmixing the filling and cutting it too early.
