Instructions

Preparation

  • Preheat your oven to 375°F (190°C).
  • Grease a 9x13-inch baking dish.
  • In a large skillet, heat olive oil over medium heat. Add onion and garlic; sauté for 2-3 minutes until fragrant.
  • Add the chopped spinach and cook until wilted, about 2-3 minutes. Remove from heat.
  • In a mixing bowl, combine cooked chicken, cooked rice, cream cheese, heavy cream, mozzarella, Parmesan, basil, oregano, salt, and pepper. Stir until well combined.
  • Mix in the sautéed spinach.
  • Transfer the mixture into the prepared baking dish, spreading it evenly.
  • In a small bowl, mix breadcrumbs, melted butter, and grated Parmesan. Sprinkle over the casserole.

Baking

  • Bake for 25-30 minutes, or until the top is golden and bubbling.
  • Let it cool for 5 minutes before serving.

Notes

To enhance the casserole, use leftover rotisserie chicken for added flavor. You can also add vegetables like bell peppers or mushrooms for more nutrition. For a lighter option, consider using low-fat versions of cream cheese and heavy cream. To achieve an even crispier topping, broil for a couple of minutes at the end.
