Preparation

  • Preheat your oven to 400°F (200°C).
  • Heat olive oil in a large, oven-safe skillet over medium-high heat.
  • Season salmon fillets with salt and pepper, then place skin-side down in the skillet and cook for 4 to 5 minutes until golden. Remove and set aside.
  • In the same skillet, melt butter, then sauté garlic for 1 minute until fragrant.
  • Add the chopped spinach and cook until wilted.
  • Stir in roasted red peppers, then add heavy cream and Parmesan, simmering for 2-3 minutes.
  • Add lemon juice and adjust seasoning to taste.
  • Return the salmon to the skillet, nesting it in the sauce.
  • Bake in the oven for 5 to 7 minutes until cooked through.
