Ingredients

For the salmon bites

  • 1.5 pounds salmon fillets, cut into bite-sized pieces Freshly cut and rich in omega-3 fatty acids.
  • 1 tablespoon olive oil Helps spices adhere.

  • 1 teaspoon onion powder Adds aromatic warmth.

  • 0.5 teaspoon salt For seasoning.

For the Bang Bang sauce

  • 0.5 cup mayonnaise Base of the sauce.
  • 0.25 cup sweet Thai chili sauce Adds sweetness.
  • 1 tablespoon sriracha sauce For heat.
  • 1 tablespoon honey Adds sweetness.
  • 1 tablespoon freshly squeezed lime juice For tang.

For garnish

Instructions

Preparation

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it.
  • In a medium-sized bowl, combine the salmon pieces with olive oil, garlic powder, onion powder, smoked paprika, salt, black pepper, and cayenne pepper (if using). Toss to coat the salmon evenly with the spices.
  • Arrange the salmon pieces in a single layer on the prepared baking sheet, ensuring they have enough space to crisp up.

Cooking

  • Bake for 10-12 minutes or until the salmon is cooked through and has a crispy exterior.
  • While the salmon bites are baking, prepare the Bang Bang sauce by whisking together mayonnaise, Thai sweet chili sauce, sriracha, honey, and lime juice until smooth.
  • Once the salmon bites are done, remove them from the oven and place them in a large bowl. Pour the Bang Bang sauce over the salmon and gently toss to coat.
  • Garnish with fresh parsley or cilantro, sliced green onions, and sesame seeds.

Notes

Store leftovers in an airtight container in the fridge for up to two days. Reheat gently in the oven to maintain crispiness. You can freeze uncooked salmon pieces tossed in the spice mix, thaw completely, and bake as instructed.
