Ingredients

For the patties

  • 2 medium sweet potatoes Vibrant orange and naturally sweet.
  • 1 cup red lentils Tender and nutty.
  • 1 medium onion Aromatic and savory.
  • 3 cloves garlic Pungent and rich.
  • 1/2 cup fresh cilantro or parsley Fragrant and bright.
  • 1 tsp ground cumin Earthy and warm.
  • 1 tsp paprika Colorful and smoky.
  • 1/2 cup panko breadcrumbs Light and crispy.
  • to taste salt and pepper Essential for enhancing flavor.
  • Olive oil for frying Smooth and flavorful.

Instructions

Preparation

  • Rinse the red lentils under cold water and boil in a pot with enough water to cover them for 15 minutes. Drain and set aside.
  • Peel and cube the sweet potatoes, boil them in salt water for 10-12 minutes until fork-tender, drain, and cool.
  • In a skillet, heat olive oil and sauté diced onion and minced garlic for 5-7 minutes until translucent.
  • In a bowl, mash the cooled sweet potatoes and mix in the lentils, sautéed onion, garlic, chopped herbs, spices, salt, and pepper.

Cooking

  • Shape the mixture into 2-inch patties and coat each with panko breadcrumbs.
  • Heat olive oil in a frying pan and fry the patties for 3-4 minutes on each side until golden brown, or bake at 400°F for 20-25 minutes, flipping halfway through.

Notes

For a healthier twist, bake instead of fry, or use air fryer for crispiness without extra oil. Adjust spice levels by adding red pepper flakes or jalapeños.
