  • 1/2 cup bell pepper, chopped Provides color and a fresh taste.

  • 1 tsp garlic powder
  • 1 tsp chili powder

Preparation

  • Add the cottage cheese into your crockpot as the creamy foundation.
  • Layer in the shredded cheddar cheese followed by the can of diced tomatoes with green chilies, including the liquid.
  • Add the chopped onions and bell peppers for texture.
  • Season with garlic powder, chili powder, and salt and pepper to taste. Stir everything to combine.
  • Cover the crockpot and cook on low for 2-3 hours, stirring occasionally.
  • Once hot and melted, serve warm with tortilla chips or nachos.

Notes

For extra flavor, consider adding black beans or corn. Increase spiciness with jalapeƱos or hot sauce. Leftovers can be used as a filling in quesadillas or burritos.
