Ingredients

For the Marinade

  • 2 tbsp ketchup For a touch of sweetness.
  • 3 tbsp agave Natural sweetness.
  • 4 tbsp rice vinegar Adds tang.
  • 4 tbsp canned pineapple juice Infuses tropical flavor.
  • 1 tbsp sesame oil Adds nutty aroma.
  • 2 tbsp avocado oil Healthy cooking oil.
  • 1 tsp ginger, minced Warm spice.
  • 4 cloves garlic, minced Aromatic and savory.
  • 3 tbsp soy sauce Adds umami.

For the Chicken

  • 1 lb chicken thighs, boneless and skinless Juicy and perfect for grilling.

Instructions

Preparation

  • Combine the ketchup, agave, pineapple juice, rice vinegar, sesame oil, avocado oil, minced ginger, minced garlic, and soy sauce in a bowl or ziplock bag. Mix well to form a marinade.
  • Add the chicken thighs to the marinade, ensuring they are fully coated. Cover or seal and marinate in the refrigerator for a minimum of 3 hours, preferably 24 hours.

Cooking

  • Preheat a cast-iron skillet or grill to medium-high heat.
  • Remove the marinated chicken from the marinade and let any excess drip off.
  • Cook the chicken for 6-8 minutes on each side until fully cooked and caramelized.

Serving
