Instructions

Preparation

  • Preheat your oven to 375°F (190°C). Spray a 9x13-inch baking dish with cooking spray.
  • In a skillet over medium heat, cook the ground beef, diced onions, and minced garlic until the beef is no longer pink, about 5-7 minutes. Drain the fat and season with salt and black pepper.
  • Layer half of the sliced potatoes in the bottom of the baking dish. Add half of the cooked beef mixture, half of the combined soup mixture, and half of the shredded cheese.
  • Repeat the layers with the remaining potatoes, beef, soup mixture, and cheese.
  • Cover the dish with foil and bake for 1 hour.
  • Remove the foil and continue baking for an additional 30 minutes until the top is bubbly and golden brown.
  • Let the casserole rest for about 10 minutes before serving.

Notes

For extra flavor, consider adding diced bell peppers or mushrooms to the beef mixture or use ground turkey for a lighter version. A pinch of smoked paprika or cayenne pepper can add more spice if desired. Store leftovers in an airtight container for up to 3 days or freeze for up to 2 months. Reheat at 350°F (175°C).
