Instructions

Preparation

  • In a large bowl, combine warm water and sugar, then sprinkle in the active dry yeast. Let it sit for about 5 minutes until frothy.
  • Add the olive oil, flour, and salt to the frothy yeast mixture. Mix until the dough starts to come together.
  • On a lightly floured surface, knead the dough for about 5 minutes until it becomes smooth and elastic.
  • Place the kneaded dough into a greased bowl and cover with a towel. Let it rise in a warm area for about 1 hour or until doubled in size.

Baking

  • Preheat your oven to 400°F (200°C).
  • Once risen, punch down the dough gently to release excess air. Transfer to a greased baking sheet, spreading it out with your fingers.
  • Use your fingertips to create dimples all over the dough. Drizzle generously with olive oil, sprinkle with chopped rosemary, and finish with coarse sea salt.
  • Bake in the preheated oven for about 20-25 minutes or until golden brown.

Notes

For a healthier focaccia, consider substituting whole wheat flour. You can also include toppings like olives or sun-dried tomatoes. Store leftovers in an airtight container for up to 3 days or freeze.
