Ingredients

  • 1 cup powdered sugar

  • 0.25 tsp ginger
  • 0.5 tsp vanilla extract
  • 2 tbsp heavy cream

For the spiced caramel drizzle

  • 0.5 cup granulated sugar
  • 2 tbsp butter
  • 0.25 cup heavy cream
  • 0.5 tsp cinnamon
  • 0.25 tsp nutmeg

Instructions

Preparation

  • Sift together almond flour, powdered sugar, and spices in a bowl.
  • In a separate mixing bowl, whip egg whites until frothy, gradually adding granulated sugar until glossy stiff peaks form.
  • Gently fold the sifted dry ingredients into the meringue.
  • Pipe the batter onto a lined baking sheet and let it sit for 30-45 minutes.

Baking

  • Preheat oven to 300°F (150°C) and bake for 14-16 minutes.

Filling

  • For the filling, beat together softened butter, powdered sugar, spices, vanilla, and heavy cream until smooth.
  • Once the shells are cooled, sandwich them with the spiced filling.

Caramel Drizzle

  • Melt granulated sugar over medium heat until deep amber.
  • Remove from heat and whisk in butter, heavy cream, and spices.
  • Drizzle the caramel over the assembled macarons and allow it to set before serving.
