Instructions

Preparation

  • In a small bowl, whisk together the rub ingredients: chili powder, brown sugar, salt, cumin, smoked paprika, onion powder, garlic powder, chipotle chili powder, and pepper.
  • Coat the chicken breasts evenly in the rub mixture, ensuring they’re well covered to absorb the wonderful flavors.
  • Marinate the chicken for at least 30 minutes in the refrigerator; if time allows, let it marinate for up to 8 hours for intensified flavors.

Cooking

  • For a stovetop version: Heat a grill pan over medium-high heat and lightly grease it with olive oil. Cook the chicken for 3-5 minutes on one side until browned. Flip the chicken over, cover it with a lid, and cook for another 5-7 minutes until fully cooked.
  • For grilling, preheat your grill to medium heat. Cook the chicken for 5-7 minutes per side until fully cooked, checking that the juices run clear.
  • Let the chicken rest for about 5 minutes before slicing.

Salsa Preparation

  • In a mixing bowl, combine all ingredients except the avocados. Mix and then chill the salsa in the refrigerator briefly.
  • Just before serving, gently fold in the diced avocados to preserve their creamy texture.
