Instructions

Preparation

  • Preheat the oven to 350°F (175°C) and line a 12-cup muffin tin with cupcake liners.
  • In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  • In a larger bowl, beat the softened butter and granulated sugar with an electric mixer until light and fluffy.
  • Add the eggs one at a time, beating well after each addition, and then mix in the vanilla extract.
  • Stir in the sour cream and milk until well combined.
  • Gradually add the dry mixture to the wet ingredients, being careful not to overmix.
  • Gently fold in the fresh raspberries and crushed pistachios.
  • Divide the batter among the cupcake liners, filling each about two-thirds full.

Baking

  • Bake for 18-20 minutes until a toothpick inserted into the center comes out clean.
  • Allow the cupcakes to cool completely on a wire rack.

Frosting

  • Beat the softened butter and powdered sugar until smooth.
  • Add the vanilla extract and heavy cream, whisking until fluffy.

Notes

For a lighter version, use whole wheat flour instead of all-purpose flour and Greek yogurt instead of sour cream. Avoid overmixing the batter for best results.
