  • 1 cup Gouda cheese, shredded For a luscious, creamy filling that melts beautifully.
  • 1 cup mushrooms, sliced These will add an earthy depth of flavor to the sandwich.
  • 1 small onion, thinly sliced For sweetness and a bit of natural caramelization.
  • 1 tbsp olive oil To enhance the roasting and bring all the flavors together.

Preparation

  • Preheat your oven to 375°F (190°C). Toss the sliced mushrooms and onions with olive oil, salt, and pepper in a bowl.
  • Spread them out on a baking sheet, ensuring they are evenly spaced, and roast in the oven for about 15 to 20 minutes until golden and tender.

Grilling

  • Prepare the bread by heating a skillet over medium heat. Generously butter one side of each slice of bread.
  • Place one slice buttered side down in the skillet, layer it generously with shredded Gouda cheese, add the roasted vegetables on top, and sprinkle more cheese over the roasted veggies.
  • Place the second slice of bread on top, buttered side up.
  • Grill the sandwich for about 3 to 4 minutes on each side until golden-brown and the cheese is melted to gooey perfection.

Serving

  • Allow the sandwich to cool for a minute, slice it in half, and enjoy while the melty cheese oozes out.

Notes

Consider adding garlic powder or red pepper flakes for an extra kick. A mix of cheeses can also add complexity. For a heartier option, add spinach or arugula.
