For the Mango Salsa

Instructions

Preparation

  • In a large bowl, whisk together soy sauce, olive oil, maple syrup, lime juice, crushed garlic, Tajin, paprika, chili powder, and kosher salt.
  • Place the salmon fillets into the marinade and coat well. Cover and marinate in the fridge for 20 minutes or longer.
  • While the salmon is marinating, prepare the mango salsa by combining diced mango, avocado, red bell pepper, cilantro, jalapeño, and red onion in a mixing bowl. Drizzle with lime juice and season with additional salt.

Cooking

  • Preheat your grill to medium-high, around 400-450°F.
  • Lightly oil the grill grates and place the salmon skin-side down. Cook undisturbed for 6-8 minutes until salmon changes color.
  • Flip the salmon and cook for an additional 4-6 minutes until the internal temperature reaches 135-140°F.

Serving

  • Remove the salmon from the grill and serve warm, topped with mango salsa.
  • Optionally, serve with coconut rice for a complete meal.
