Preparation
In a large bowl, whisk together soy sauce, olive oil, maple syrup, lime juice, crushed garlic, Tajin, paprika, chili powder, and kosher salt.
Place the salmon fillets into the marinade and coat well. Cover and marinate in the fridge for 20 minutes or longer.
While the salmon is marinating, prepare the mango salsa by combining diced mango, avocado, red bell pepper, cilantro, jalapeño, and red onion in a mixing bowl. Drizzle with lime juice and season with additional salt.
Cooking
Preheat your grill to medium-high, around 400-450°F.
Lightly oil the grill grates and place the salmon skin-side down. Cook undisturbed for 6-8 minutes until salmon changes color.
Flip the salmon and cook for an additional 4-6 minutes until the internal temperature reaches 135-140°F.
Serving
Remove the salmon from the grill and serve warm, topped with mango salsa.
Optionally, serve with coconut rice for a complete meal.
