Instructions

Preparation

  • Preheat your oven to 350°F (175°C) and prepare two 9-inch round cake pans by greasing and flouring them.
  • In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  • In a large mixing bowl, cream together the butter and granulated sugar until light and fluffy.
  • Add the eggs one at a time, stirring gently after each addition. Then, mix in the vanilla extract.
  • Fold in the crushed pineapple and milk.
  • Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  • Gently fold in the melted white chocolate chips.

Baking

  • Divide the batter evenly between the prepared pans.
  • Bake for 25-30 minutes, or until a toothpick comes out clean when inserted into the center.
  • Allow the cakes to cool for about 10 minutes in the pans before transferring them to a wire rack to cool completely.

Frosting

  • For the frosting, beat together the cream cheese and powdered sugar until smooth.
  • Then add the heavy cream and vanilla, whipping until thick.
  • Stir in the melted white chocolate chips.

Assembly

  • Frost one layer of the cooled cake, placing the second layer on top and frosting the entire cake.
  • Garnish with white chocolate shavings or fresh pineapple slices.

Notes

Ensure all ingredients are at room temperature for a smooth, consistent batter. Avoid overmixing to keep your cake tender. Fresh pineapple can intensify flavor.
