Ingredients

For the Marinade

  • 8 pieces medium-sized lamb chops
  • 1 teaspoon black pepper
  • 2 teaspoons salt
  • 1 tablespoon dried oregano
  • 0.5 teaspoon onion powder
  • 2 teaspoons dried thyme
  • 0.5 tablespoon smoked paprika
  • 3-4 cloves garlic
  • 0.5 whole red bell pepper
  • 0.25 cup olive oil
  • 0.5 whole lemon (juice)
  • to taste fresh parsley (for garnish)

Instructions

Preparation

  • Finely process the red bell pepper, fresh parsley, and garlic to form a coarse mixture for the marinade.
  • Divide the lamb rack into 8 even chops on a chopping board.
  • In a mixing bowl, combine the lamb chops with the bell pepper mixture, salt, black pepper, oregano, thyme, smoked paprika, olive oil, and lemon juice. Massage the marinade into each chop.
  • Cover and marinate in the refrigerator for about an hour.
  • Bring the lamb chops to room temperature before cooking and preheat the oven to 400°F (200°C).

Cooking

  • Heat 2 tablespoons of olive oil in a cast-iron skillet over medium heat.
  • Sear each lamb chop for 1-2 minutes on each side until golden brown.
  • Transfer the chops to the skillet, ensuring they are not overlapping, and place in the oven.
  • Bake for 2-5 minutes for medium rare to medium doneness, or 5-10 minutes for medium well to well done.
  • If needed, repeat the baking process with remaining chops.

Serving

  • Serve the cooked lamb chops garnished with fresh parsley.

Notes

For an extra depth of flavor, let the marinated lamb chops sit overnight in the fridge. Using a thermometer can help you achieve your desired doneness exactly. If you have leftovers, they can be stored in an airtight container in the fridge for up to three days.
