  • 2 cups panko breadcrumbs For a crunchy texture.

Preparation

  • Cut chicken breasts into bite-sized pieces, about 1-inch. Pat dry with paper towels.
  • In a shallow bowl, whisk together the all-purpose flour, salt, and garlic powder until well combined.
  • Set up two bowls: one for buttermilk and one for panko breadcrumbs.
  • Dredge each piece of chicken first in the flour mixture, then dip in buttermilk, and finally coat with panko breadcrumbs.

Frying

  • Heat oil in a large pot to 350°F (177°C). Use a thermometer to check the temperature.
  • Carefully add breaded chicken pieces in batches, frying for 2-3 minutes until golden brown.
  • Remove chicken with a slotted spoon and place on paper towels to drain excess oil. Season with salt.

Notes

For an even crispier texture, freeze the coated chicken pieces for 15-30 minutes before frying. You can also add spices like paprika or cayenne to the flour mixture for more flavor.
