Instructions

Preparation

  • Preheat your oven to 325°F (165°C).
  • In a medium bowl, combine the graham cracker crumbs, 1/3 cup of sugar, and melted butter. Mix until fully combined and press this mixture firmly into the bottom of a 9-inch springform pan.
  • In a large bowl, beat together the softened cream cheese and the remaining 1 cup of sugar until the mixture is smooth and creamy.
  • Gradually add the flour, key lime juice, key lime zest, and vanilla extract, mixing until just combined.
  • Add the eggs one at a time, beating gently after each addition.
  • Stir in the sour cream until fully blended.
  • Pour the creamy mixture over the prepared crust.

Baking

  • Bake for 55-60 minutes or until the center is set but retains a slight wobble.
  • Turn off the oven and open the door slightly, allowing the cheesecake to cool in the oven for 1 hour.
  • Remove the cheesecake from the oven and let it cool completely on a wire rack.
  • Chill the cheesecake in the refrigerator for at least 4 hours before serving.

Notes

For better results, use room temperature dairy ingredients. You can add an extra egg yolk for creaminess or increase the lime zest for a stronger flavor. Serve with whipped cream or fresh berries for added flavor.
