Instructions
 

Preparation

  • Preheat your oven to 325°F (165°C) and grease and flour a 9x5 inch loaf pan.
  • In a medium bowl, whisk together the flour, baking powder, and salt until well combined.
  • In a large bowl, cream the softened butter and granulated sugar together using an electric mixer until light and fluffy.
  • Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract, lime zest, and lime juice.
  • Gradually add the dry mixture to the wet mixture, alternating with the sour cream, ending with dry ingredients.
  • Pour the batter into the prepared loaf pan and smooth the top with a spatula.

Baking

  • Bake the cake for 55-65 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Glazing

  • In a bowl, whisk together powdered sugar, lime juice, and lime zest until smooth.
  • Drizzle the glaze over the cooled cake and allow it to set before slicing.
