Preparation

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until the mixture resembles wet sand.
  • Press the mixture firmly into the bottom of a 9×9-inch baking pan to create a crust.
  • Bake for 8-10 minutes or until golden brown. Allow to cool completely.
  • In another bowl, beat cream cheese and powdered sugar until smooth. Add vanilla extract, lemon zest, and lemon juice, mixing until well combined.
  • In a separate bowl, whip heavy cream until stiff peaks form, then gently fold it into the cream cheese mixture until blended.
  • Once the crust is cooled, spread the cheesecake mixture over it evenly.

Topping

  • In a saucepan over medium heat, combine blueberries, sugar, and lemon juice. Cook until blueberries start to burst and release their juices.
  • If you prefer a thicker topping, sprinkle in cornstarch and stir until the mixture thickens. Remove from heat and let cool.
  • Spoon the blueberry topping over the cheesecake layer.

Setting

  • Refrigerate for at least 4 hours, or ideally overnight, to allow the cheesecake to set properly.
  • When ready to serve, slice into squares and enjoy!

Notes

Ensure that the cream cheese is at room temperature before starting for a smoother blend. You can skip the lemon zest, but it adds a lovely brightness. For a caramel twist, consider drizzling caramel sauce on top before serving.
