Instructions

Preparation

  • Preheat your oven to 350°F (175°C) and grease a loaf pan.
  • In a large bowl, whisk together the flour, salt, baking powder, and baking soda.
  • In another bowl, whisk together the granulated sugar, eggs, melted butter (or oil), fresh lemon juice, lemon zest, and vanilla extract.
  • Fold in the shredded zucchini gently until well distributed.
  • Pour the dry ingredients into the wet mixture and stir until just combined.
  • Pour the batter into the prepared pan and bake for 45-55 minutes or until a toothpick inserted in the center comes out clean.
  • Let the loaf cool for about 10 minutes in the pan before gently removing it and setting it on a wire rack to cool completely.
  • Optional: Drizzle with a simple glaze made from powdered sugar and lemon juice before serving.

Notes

For a healthier twist, substitute half the flour with whole wheat flour, reduce sugar, or incorporate nuts. Always squeeze out excess moisture from zucchini, and avoid overmixing the batter.
