Ingredients

For the Flatbread Dough

  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking powder

Instructions

Preparation of Dough

  • In a large mixing bowl, combine the flour, salt, and baking powder.
  • Gradually add the warm water and olive oil, stirring until a loose dough begins to form.
  • Transfer the dough to a floured surface and knead for about 5–7 minutes until smooth and elastic.
  • Cover the dough and let it rest for 30 minutes.

Preparation of Filling

  • In another bowl, mix together the crumbled feta cheese, chopped mint, and lemon zest.

Assembling the Flatbreads

  • Divide the rested dough into golf ball-sized pieces.
  • Roll each piece into a thin circle on a floured surface.
  • Place a generous spoonful of the filling in the center of each circle.
  • Fold the dough over the filling and pinch the edges to seal.

Cooking Flatbreads

  • Heat a skillet over medium-high heat and add olive oil to coat the bottom.
  • Place the stuffed flatbreads into the skillet and cook for 2–3 minutes on each side until golden brown.
  • Garnish with fresh parsley before serving.

Notes

Consider adding sun-dried tomatoes or olives for added flavor. Adjust skillet temperature to avoid burning. Serve with yogurt sauce or tzatziki.
