Instructions

Preparation

  • Preheat your oven to 350°F (175°C) and prepare a 9x13-inch baking pan with grease or parchment paper.
  • In a large mixing bowl, cream together 1 cup of softened butter and 1 1/2 cups of sugar until light and fluffy, about 3-5 minutes.
  • Add the eggs one by one, mixing well after each addition, then stir in 2 teaspoons of vanilla extract.
  • In a separate bowl, sift together 1 1/2 cups of flour and 1/2 cup of cocoa powder and gradually add to the creamed mixture, alternating with a splash of water or milk.
  • Fold in 1 cup of chopped pecans and pour the batter into the prepared pan, smoothing the top.

Baking

  • Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.

Icing

  • For the icing, melt 1/4 cup of butter in a saucepan over medium heat, then add 1/2 cup cocoa powder and 1/2 cup milk, stirring until well blended.
  • Remove from heat and whisk in 16 ounces of confectioners' sugar until smooth and glossy.

Assembly

  • Once the cake is out of the oven, sprinkle 4 cups of mini marshmallows over the warm cake.
  • Pour the icing on top, allowing it to spread and cover the cake evenly.
  • Let the cake cool slightly before serving.
