Ingredients

For the crust

  • 1.5 cups 1 1/2 cups graham cracker crumbs For a crumbly, buttery crust
  • 0.5 cups 1/2 cup melted butter To bind the crumbs together
  • 0.25 cups 1/4 cup sugar Adds a touch of sweetness

For the filling

  • 1 package 1 package (3.4 oz) instant banana cream pudding mix Delivers rich banana flavor
  • 2 cups 2 cups cold milk To create a creamy filling
  • 1 cup 1 cup heavy cream For a luscious whipped topping
  • 2 tablespoons 2 tablespoons powdered sugar To sweeten the cream
  • 1 teaspoon 1 teaspoon vanilla extract For aromatic enhancement
  • 2 2 ripe bananas, sliced Providing a tender burst of freshness
  • Whipped cream, for topping To make everything feel indulgent
  • Honey, for drizzling (optional) Offering a sweet finishing touch

Instructions

Prepare the Crust

  • In a medium bowl, mix graham cracker crumbs, melted butter, and sugar until combined. Press the mixture firmly into the bottom and sides of mini tart pans or muffin tins to form crusts. Set aside to firm up.

Make the Pudding

  • In a separate bowl, whisk together the instant banana cream pudding mix and cold milk. Beat vigorously for about 2 minutes until it thickens to a silky-smooth consistency.

Whip the Cream

  • Using another bowl, beat the cold heavy cream with powdered sugar and vanilla extract until soft peaks form, making it fluffy and light.

Combine

  • Gently fold the whipped cream into the banana pudding mixture until fully integrated and smooth.

Assemble

  • Spoon the banana filling generously into the crusts. Top each with banana slices, a dollop of whipped cream, and a drizzle of honey if desired.

Chill

  • Place the mini mousse pies in the refrigerator for at least 2 hours to set.

Notes

Ensure your heavy cream is very cold before whipping. Be gentle when folding the whipped cream into the pudding mixture to maintain a light texture. Don't skip the chilling time to allow the filling to set and develop flavors.
