Instructions

Preparation

  • Preheat your oven to 350°F (175°C). In a mixing bowl, combine the crushed graham crackers and melted butter until they resemble wet sand.
  • Press this mixture firmly into the bottom of a springform pan and bake for about 8 minutes.

Making the Filling

  • In a large mixing bowl, beat together the mascarpone cheese, cream cheese, and sugar until smooth and creamy.
  • Add the eggs one at a time, mixing until fully incorporated after each addition.
  • Next, add the fresh orange juice, zest, and vanilla extract, mixing until velvety.
  • Pour the cheesecake filling over the par-baked crust and smooth the top.
  • Bake at 325°F (160°C) for 45-50 minutes, until the edges are set but the center is slightly jiggly.
  • Allow it to cool at room temperature before refrigerating for at least four hours, or overnight.

Preparing the Ganache

  • Heat the heavy cream over medium heat until simmering.
  • Remove from heat and stir in the dark chocolate chips until melted and smooth.

Serving

  • Drizzle the ganache over the chilled cheesecake before serving.
