Instructions
Preparation
Preheat your oven to 350°F (175°C). In a mixing bowl, combine the crushed graham crackers and melted butter until they resemble wet sand.
Press this mixture firmly into the bottom of a springform pan and bake for about 8 minutes.
Making the Filling
In a large mixing bowl, beat together the mascarpone cheese, cream cheese, and sugar until smooth and creamy.
Add the eggs one at a time, mixing until fully incorporated after each addition.
Next, add the fresh orange juice, zest, and vanilla extract, mixing until velvety.
Pour the cheesecake filling over the par-baked crust and smooth the top.
Bake at 325°F (160°C) for 45-50 minutes, until the edges are set but the center is slightly jiggly.
Allow it to cool at room temperature before refrigerating for at least four hours, or overnight.
Preparing the Ganache
Heat the heavy cream over medium heat until simmering.
Remove from heat and stir in the dark chocolate chips until melted and smooth.
Serving
Drizzle the ganache over the chilled cheesecake before serving.
