Instructions

Preparation

  • Preheat your oven to 350°F (175°C) and prepare your baking sheet by lining it with parchment paper or a silicone baking mat.
  • In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-5 minutes.
  • Add the egg and peppermint extract, stirring until fully combined.
  • Gradually incorporate the flour, mixing until a soft dough forms; do not overmix.
  • Divide the dough into two portions. To one, add red food coloring and mix until vibrant.
  • Roll each portion into a rectangle about 1/4 inch thick on a floured surface.
  • Stack the red dough on top of the white and roll into a log shape. Chill the log for 20-30 minutes.
  • Slice the chilled log into 1/4 inch thick rounds using a tree-shaped cookie cutter.

Baking

  • Place cookies on the baking sheet and bake for 8-10 minutes until edges are slightly golden.
  • Allow cookies to cool, then decorate with optional crushed candy canes or sprinkles.

Notes

Make sure the butter is softened. Chill the dough to maintain shape during baking. Store in an airtight container for up to 1 week.
