Instructions

Preparation

  • Preheat the oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.
  • In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  • In a large bowl, cream together the softened butter and sugar until light and fluffy.
  • Add eggs one at a time, beating well after each addition. Stir in vanilla extract and pink dragon fruit puree.
  • Gradually mix in dry ingredients alternating with milk until just combined.
  • Divide batter evenly between the pans and smooth the tops.

Baking

  • Bake for 25-30 minutes until a toothpick comes out clean.
  • Cool cakes in pans for 10 minutes, then transfer to a wire rack to cool completely.

Frosting

  • In a large bowl, beat softened butter until smooth. Gradually add powdered sugar.
  • Mix in vanilla extract, heavy cream, and pink dragon fruit puree. Add food coloring if desired.

Assembly

  • Once cooled, frost the top of one layer, place the second layer on top, and frost the sides and top.
  • Decorate with edible flowers and serve.
