Ingredients
  

For the crust

  • 1.5 cups graham cracker crumbs for a crispy and buttery crust
  • 0.25 cups butter, melted adding richness and moisture
  • 0.25 cups sugar to sweeten the crust just right

For the filling

  • 16 oz cream cheese, softened creating an incredibly creamy texture
  • 0.5 cups sugar to sweeten the filling deliciously
  • 1 tsp vanilla extract for aromatic depth and flavor
  • 3 pieces eggs to give the filling a lightness
  • 0.5 cups pistachios, finely chopped adding a nutty crunch
  • 0.5 cups heavy cream for richness and creaminess

For the raspberry topping

  • 1 cup fresh raspberries vibrant and juicy
  • 0.25 cups sugar to enhance tartness
  • 1 tbsp lemon juice brightening the raspberry topping

Instructions
 

Preparation

  • Preheat your oven to 325°F (163°C) and carefully grease a 9-inch springform pan.
  • In a mixing bowl, combine the graham cracker crumbs, melted butter, and sugar. Mix until it resembles wet sand and press firmly into the bottom of the prepared springform pan.
  • Bake the crust for 8-10 minutes, until lightly golden and fragrant.

Filling

  • In a large bowl, beat the softened cream cheese until smooth.
  • Gradually add sugar, mixing well. Then add the vanilla extract and eggs one at a time, mixing well after each addition.
  • Fold in the finely chopped pistachios and heavy cream gently into the batter.
  • Pour the creamy filling over the cooled crust and bake for 50-60 minutes until the center is slightly wobbly.

Topping

  • In a small saucepan, combine the fresh raspberries, sugar, and lemon juice. Cook over medium heat until the mixture thickens, approximately 8-10 minutes.
  • Allow the raspberry sauce to cool before pouring it over the cheesecake.

Cooling

  • Remove the cheesecake from the oven, let it cool at room temperature, then refrigerate for at least four hours to set completely.

Notes

For best results, ensure your cream cheese is at room temperature for a smoother filling. You can switch nuts in the crust and filling for variations. Store leftovers in an airtight container in the refrigerator for up to one week.
