For the Frosting

  • 2 sticks unsalted butter Adds richness.

  • 4 cups sifted confectioners' sugar Gives sweetness and smoothness.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Prepare two 9-inch round cake pans by greasing them with butter and dusting with flour.
  • In a large bowl, combine the flour, sugar, baking soda, salt, and cocoa powder. Whisk together until well combined.
  • In a separate bowl, mix the vegetable oil, buttermilk, eggs, red food coloring, white vinegar, and vanilla extract. Whisk until fully combined.
  • Gradually add the wet ingredients to the dry mixture, stirring gently until you have a smooth batter.
  • Stir in the purple food coloring until the desired shade is achieved.
  • Divide the batter evenly between the prepared cake pans, smoothing the tops with a spatula.

Baking

  • Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted comes out clean. Allow the cakes to cool in the pans for about 10 minutes before transferring them to a wire rack to cool completely.

Frosting

  • Beat together the cream cheese and butter in a mixing bowl until smooth and creamy.
  • Add the vanilla extract and gradually mix in the sifted confectioners' sugar until smooth.
  • Once the cakes are cooled, frost the top of one layer generously with cream cheese frosting. Place the second layer on top and frost the entire cake.

Serving

  • Decorate as desired with sprinkles, fresh fruits, or edible flowers and serve.

Notes

Let your ingredients come to room temperature for even baking. Consider adding almond extract for extra flavor. Level the tops of the cakes after cooling for easier layering.
