Raspberry Filling Ingredients

  • 1 cup fresh raspberries Provides tartness to the filling.
  • 0.25 cup granulated sugar Enhances the sweetness of the raspberry filling.
  • 1 tsp lemon juice Brightens the flavors of the filling.
  • as needed crushed pistachios Optional, for added crunch.

Instructions
 

Preparation

  • Preheat your oven to 300°F (150°C) and line two baking sheets with parchment paper.
  • Sift together the almond flour and powdered sugar to avoid lumps.
  • Beat the egg whites on medium speed and gradually add granulated sugar until stiff peaks form.
  • Fold in gel food coloring until evenly blended.
  • Gently fold in the almond flour mixture until the batter flows smoothly.
  • Pipe small circles onto the baking sheets and tap lightly to remove air bubbles.
  • Allow the macarons to rest for 20-30 minutes.
  • Bake for 15-18 minutes until set, then cool completely.

Making the Filling

  • Combine raspberries, granulated sugar, and lemon juice in a saucepan.
  • Cook over medium heat until thickened to create a jam-like filling.

Assembly

  • Once cool, pipe filling onto one macaron shell and sandwich with another.
  • Optionally, sprinkle crushed pistachios on the filling.

Notes

Store macarons in an airtight container at room temperature for up to 3 days, or in the fridge for a week.
