Preparation
In a small saucepan, combine fresh raspberries, sugar, and lemon juice over medium heat to make the raspberry sauce. Cook until thickened, about 8-10 minutes, then let it cool.
In a blender, combine the cooled raspberry sauce with vanilla ice cream and whole milk. Blend until smooth.
Drizzle raspberry jam inside the serving glasses before pouring in the prepared shake mixture.
Whip the cream with powdered sugar until soft peaks form. Top each shake with a generous dollop of whipped cream and sprinkle with crushed graham crackers.
Place mini cheesecake slices on top of each shake. Finish with fresh raspberries and additional graham cracker crumbs for garnish. Serve immediately.
Notes
Use cold ingredients for a thicker shake. Garnish creatively with different toppings.
