Ingredients

For the tart shells

  • 1 sheet refrigerated pie crust Flaky and tender, waiting to be filled.

For the filling and topping

  • 1 cup fresh raspberries Vibrant and juicy, bursting with flavor.
  • 1/4 cup raspberry jam Sweet and aromatic, infusing each bite.
  • 1 tsp lemon juice A zesty touch that brightens flavors.
  • 1/2 cup mascarpone or cream cheese Creamy and smooth, adding richness.
  • 2 tbsp powdered sugar Lightly sweetening without overpowering.
  • 1/2 tsp vanilla extract Fragrant and warm, enhancing the overall taste.
  • Fresh mint leaves optional garnish Adds a refreshing touch for presentation.

Instructions

Preparation of Tart Shells

  • Press the pie crust into your tart pans and prick the bottoms with a fork.
  • Bake in a preheated oven at 375°F (190°C) for about 10–12 minutes or until golden brown.
  • Remove from the oven and allow to cool completely before adding the filling.

Preparation of Filling

  • In a mixing bowl, whip together the mascarpone, powdered sugar, and vanilla until smooth.
  • Mash half of the raspberries and mix with raspberry jam and lemon juice in another bowl.
  • Spread the mascarpone mixture into the cooled tart shells.
  • Top with the raspberry mixture and arrange whole raspberries on top.
  • Optionally garnish with mint leaves and chill until ready to serve.

Notes

Ensure all ingredients are at room temperature for a smoother filling. Lightly prick the pie crust to prevent bubbling and cool shells completely to avoid sogginess.
