Ingredients

Crust

Raspberry Swirl

Instructions

Preparation

  • Preheat the oven to 325°F (165°C) and line a 9x9-inch baking pan with parchment paper.
  • In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Press this mixture firmly into the bottom of the prepared pan and bake for 8-10 minutes until golden. Let cool completely.
  • In a large bowl, beat cream cheese until smooth with an electric mixer. Gradually add sugar and vanilla, mixing well.
  • Add eggs, one at a time, ensuring each is fully incorporated before adding the next. Finally, stir in the sour cream until combined.
  • In a separate bowl, mash fresh raspberries with a fork and mix with raspberry jam.

Baking

  • Pour the cheesecake filling over the cooled crust, spreading it evenly. Swirl in the raspberry mixture gently.
  • Bake for 45-50 minutes until the edges are set but the center remains slightly jiggly.
  • Let cool at room temperature, then refrigerate for at least 4 hours before serving.

Serving

  • Once chilled, cut into bars and serve with fresh whipped cream or a scoop of vanilla ice cream.

Notes

Don't skip the refrigeration step for the right consistency. Experiment with other fruits for swirling.
